Industrial Refrigeration Melbourne – Bakery retarder / prover installation

The Team at MNK Technical Services recently worked with our colleagues from Bakery Combinations to deliver a large scale project on the Victorian Surf Coast.

The Hengel Roll-thru proofing tunnels have been developed to meet the needs of fast paced baking operations. The dough is held at a certain temperature (refrigerated overnight) until the baker is ready to prove it. Side mounted evaporator coils with axial fans ensure plenty of cold air movement.

This particular installation incorporates 3 external roof mounted steam generators for rapid humidity control as well as electric elements for dry heat. The proving phase ensures the dough is ready for baking at the appointed time, transforming the tunnels from cold storage to heated chambers.

Refrigeration was provided by remote located 3 phase Hermetique condensing units.

With direct support from Hengel in France and our partners at BCA, our latest installation was rewarding and proves that you are never too old to learn new things.
